Canning is a great way to preserve the fresh taste of your garden produce for the winter months. It is also one part of our Appalachian heritage that is still in practice today. Unfortunately, canning methods that were safe 50 years ago may not be safe today. This is because of natural changes in the human body and changes in the food grown today. We and our food are not as resistant to food borne pathogens (any microorganism found in food that can cause disease) as generations past.
